Had great food and banter with the other 20 attendees, bbq slow cooked beef cheeks tacos, slow cooked pork butt end pieces, grilled jalapeños & cheese bites,  bbq corn bites, Texas bbq brisket , southern bbq biscuits, desert of bbq key lime pie. 
Their various courses would make great gifts for ppl you know who like their BBQ time.

Sounds like a great day. It proves whatever you think you know theres always something else to learn and as someone who's done a bunch of these types of courses (both in front and behind the scenes) theses never been a time where I didn't get something new out of them.

I and any attendee had the opportunity to ask any questions about cooking techniques, cuts of meats, alternative ingredients, equipment etc.  
Different courses have differing levels of “hands on” experience, for the Low & Slow,  the main courses 

need several hours of cooking so not much to do except discuss, watch and enjoy eating the results. The deserts, biscuits we were able to make from scratch. 
Lots of Q&A about the various products, including Smokefire pellet, Kamodo ceramic, Smokey Mountain, Genesis, traditional Kettle, Q-bbqs etc.  
How to set-up snakes, how to use the Smokey Mountain, baking, smoking accessories etc.   There wasn’t a question they couldn’t answer , and, in-depth. 
There was a good session on how to prepare a brisket for cooking. Used a nice 7kg F1 Wagu brisket to show how to trim and then presented the cooked version for show and tell & carving. 
For cooking they used the WeberQ’s, Kettle’s, Smokey Mountain.

Haven't heard of that trick Sam unless using prongs which can make it difficult to cut the Gyros in between the forks which is why half an onion  on either side can make it easier to cut but have not heard of this if using plates so whats the reason behind id it mate?

I’m indoors today but this curry has a BBQ parallel. Dry rub the cubed meat the day before.

Any views on the 'master built ' smoker bbqs?

 

My Bunnings smoker gas/charcoal bbq/smoker is now too large for our new place and are looking to replace it for a max of around $1500

Consider a bullet smoker, either the ProQ or the Weber Smokey Joe range. 
If you want a traditional BBQ + offset smoker they are still pretty large like what you have.

butterflied leg of lamb from local butcher, marinated to @evil c recipe is still going strong for family christmas ...was a big hit as usual...

Tried a Turkey for Christmas, soaked in a sugary brine overnight, lathered with butter infused with garlic, sage, time, rosemary and cracked pepper. 

Lightly smoked at 225 with American Oak spritzing with chicken stock - 3hrs

cranked up the temp to 300+ for a crispy skin looking for 165 internal temp, came out super juicy and was hammered by the family.

I’m not a big fan of smoked poultry, for me it was better cold on Boxing Day on a panini with Camembert and cranberry sauce.

 Cooked low for 2 1/2 hrs. Nuff said.  Now wrapped in foil with maple syrup and apple cider vinegar and back on bbq for another hr or so.  Then finish unwrapped and basted with spicy bbq sauce. 
 

completed, served with home grown beetroot, tomatoes & basil salad + red onion, spinach, dates, hazelnut nuts and toasted bread pieces.

simple burgers definitely come up good on the webber Q 🙂  yum tasty :D

I cooked this recipe on the WeberQ on Monday and we combined with BBQ baked potato and steamed vegetables. 
Today, we used the leftovers in a Taco Tuesday meal.

Had a go at some burnt ends on New Years Day 

Smoked up a brisket point standard method,  wrapped at 150 but removed early around 185 and cubed.

Mix in a concoction of BBQ sauce, rendered down Coke, brown sugar, Worcestershire, soy sauce, butter. Return to the smoker and drizzle with honey, kill them until the sauce has reduced to goo. Look out arteries

Can anyone please help me with a good gas BBQ for a family of 2.

 

I am after a good quality, easy to clean  small BBQ.

Assume you want a gas (bottle) bbq?

Get a Weber BabyQ+ , Great for 2-4ppl. Will do a roast chicken or Low & Slow cooking. 
You pay a bit more for them but they work well and their support (if ever needed) is great.

Hi Dr A,

 

We are a family of 2 and love our Konro, very versatile, easy to keep clean.

A few different sizes to look at.

Only downside is that the Binchotan charcoal is a bit pricey but is reusable 2-3 cooks.

It provides a bit of theater to BBQ'ing.
