Looks magnificent. One of my favourites fishes. Perfect way to cook and retain its delicate flavour. What you think of the Farr chardonnay ?  Love his pinots but not tried his whites.

It’s very good, Nappa Valley  style with lots of malo, still some available at the Re Store Oxford St Leederville. I love the style 👍👍🙏

Greek style Butterflied Lamb seared both sides over Redgum coals, then finished off in the Weber!

Marinated overnight - Several cloves of garlic minced, juice of 2 lemons plus the Zest, chopped Rosemary, plenty of Salt, Black Pepper and copious amounts of Extra Virgin olive oil. 

Came up very well ! 😊

Ribs for lunch again today!!  Yum Yum. 
currently braising in the oven before finishing on the bbq. 

Reminds me that I have not posted ant pics here lately. I must.

4) 3.5hr braising (should have added a smidgen more beer!)

3) add some dipping sauce to caramelise.

Haven't posted here in a while so here's yesterday's cook.

 

17.9kg pork shoulder seasoned up and into the fridge overnight

Onto the smoker @6am burning ironbark splits held around 120 degrees and approx 13 hours later as soft as warm butter.

Currently BBQ/Smoking a 2.5Kg brisket atm on my BabyQ Weber - always fun to get the smoke going well and monitor the low temperature.  Best way is with the laptop, can of beer, temperature probes and sit outside by the BBQ.

little family easter get together ... was running short on time and grabbed the aldi greek marinated lamb shoulder. its comes trussed uo as a roast... i cut off the threads and sprawled it out ... brushed it with some (olive oil - rosemary - lemon and rind, garlic salt and pepper) and slapped it on the webber Q ... was amazed how quickly it cooked only about 30 min !

a little bit of resting and then goodness it was gone.. people kept coming back for 2nd and thirds and fourths :D ..big hit !
