One of the family favorites,  Pad Kee Mao or Drunken Chicken. 

Uses fresh wide rice noodles with vegetables of your choice.

Sauce consists of:

1 .5tbs Oyster Sauce,1 tbsp  light Soy sauce, 1.5tbs Kecap Manis or Sweet dark Soy,1 tbs Fish sauce, 1 tbs Palm Sugar, 1 tbs Lime juice and 1/2 tbs Rice wine Vinegar.

Add together in small jug and stir.

Fry up in wok lightly salted 450g Chicken Breast sliced thinly in batches for a few mins till cooked through. 

Set aside.

Fry up in wok 2 cloves of garlic,  1 small Onion, 1/2 red Capsicum, diced carrot, 1 red chilli, and any other veges you might like. 

Microwave fresh Rice noodles for around 2 minutes,  then carefully separate from each other. 

Toss Chicken back in wok, add rice noodles and pour over Sauce mixture .

Add 1 cup of fresh Thai Basil and toss through.

Serve with a good Marlborough Pinot Gris or Gewurtztraminer.

 

Garnish with Thai Basil and chilli if required.

Here's one from the archives, dont think betty boop qualifies as a drunken b@st@rd however,  too moderate a drinker - guess that's part of the mod gig! ?

Giving they a run this evening @evil c for family dinner....suprisingly had most ingredients ! already got the sauce done. vegies ready, will cut up chickenn pick up some noodles and thai basil and should be go ! :D  thanks for updating with the recipe ! you are a gem. dont worry wont stop me coming over ! covid, recipes  our not :D

That is very wise. @djb made the mistake of using his as a lazy susan. That wasn't good for the turntable.

i remember he upgraded...any excuse ... how is our octogenarian friend ...we dont seem to be graced with his presence these days ....he is partial to good food I low ...and a nice red drop :D

I think that he has devoted himself to food and drink these days. He's now a nonagenarian  too ;)

only comment from younger daughter was we can up the chilli which will do for next time :)

 

also wife said to next time put noodles for 2min in warm water separates easier ...

I have just finished making gnocchi.  Possibly the best I have ever made.  Little pillows of soft pleasure. There is an art to making  gnocchi.  I keep trying.  The meat sauce has been slow cooking for over a day on the induction.  They will both come together tomorrow night.  Looking forward to the meal.
