Chilli Salami - is there a source ?

We bought some from local market a month or so ago. was absolutely delicious... we only use in thin slices to spice things up at times. missing it cant seem to find anything similar. market guy has gone awol... not seen again.

 

is there another source ... ? am not talking the super market quite bland variety....

    Salami finally ready for a taste today. Smoked half the batch using redgum and boy oh boy it tastes delish @betty boop would love to hear you thoughts on how this compares.

As soon as I get me second kitchen finished (hopefully inn the next 2-3 weeks) i'll be making a big batch!!! Only real meat and love goes into my salami...ahem let me think about re-phrasing that  xD

thats a seperate problem .... good chorizo... but working on the good hot salami problem first :D

 

perhaps I need to put an APB out on the local market hot salami guy :) while tubular gets things going ! 

I'm not an aficionado, but I've always found Tibaldi Hot Chilli Salami to be a good off the shelf option. Shouldn't be too hard to find. My local IGA has it.

I've made beef jerky with that stuff, you can feel your teeth burning.

I think that's not how put love in your salami, but it IS how you add fear and trepidation, as well as completely mask the flavours of anything but the chilli.

Looks like possibility salami guy turning upto our market this weekend. Will get some to tide over.

 

In mean time we found primo stuff at local supermarket ... blech...

Ask your local butcher. Clever people, they are.

Maybe they can put you on to a decent source if they don't produce any, or you don't favour their product.

My issue with most processed meats is the inclusion of nitrites which imo are unnecessary IF you pay close attention to the salt and acidity of your product (along with the necessary cleanliness of your processing area and supplier). I prefer an all natural product without the inclusion of the cancerous causing chemicals myself.

 

Ive been speaking with a few butchers/processed meat suppliers of late and they keep telling me there hands are tied by the likes of PrimeSafe and other licences required to prevent listeria poisoning etc..

Venison Meat,Spices,Dextrose,Sodium Nitrate(250),Starter Culture,Potassium, Anti Oxident

Mmm salami.. I do love a good hot sopressa. I do agree that some of the commercial brands are a bit ho hum. Chorizo? Don't get me started. Most, if not all, of the supermarket brands are absolutely woeful. Bland and either full of sugar or paprika bleh. :sick: Have to source one from the Spanish grocery store on Johnston St Fitzroy..

 

For salami, try an Italian deli or pop in to Mediterranean Wholesalers on Sydney rd. for an imported, or at least better, option. There is also a huge Italian supermarket at Essendon Fields or DFO or whatever it is.. 

 

Ace Frehley's would probably be good too :thumb:

argh... salami guy didnt show at the market...

 

picked up a small ham instead...amazing all the way from echuca ! some of thee market guys travel far..

 

but still no salami :D 

 

so still going on the supermarket dross.... *shrug*
