its just that i cant cook anything as exotic* as some of these dishes

 

*substitute "exotic" with "gourmet"

 

 

but more the fact that i was hungry and starving and waiting to go out to a restaurant  ;-)

That's why I started the thread - all of the recipes (of mine at least) are excellent in that they're quite easy and inexpensive but will wow your guests.

Even someone of my limited ability in the kitchen will get a good  result - give the muffins and Marinara recipe a try!

New Ottolenghi recipe - Osso Bucco (meant to be Oxtail but prefer this cut) with Pumpkin & Cinnamon

This was meant for our dinner guests who pulled the plug on coming LATE this morning!  :mad:

Oh well, special meal & more left over - not much though, too tasty to waste!  ;)

I made this tonight. It's delicious and full of iron.

 

 

Spanakopita (Spinach Pie)

 

 

Really easy recipe.

 

  • bunch of spinach (washed and leaves cut from stems - you can either keep the stems and use for a stir fry or chuck them)
  • an onion, chopped finely
  • 1/2 cup ricotta cheese
  • 2 eggs, roughly beaten
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder or 2 cloves garlic, finely chopped
  • 1/4 tsp salt
  • 1 tsp grated nutmeg or 1/2 tsp nutmeg powder
  • filo pastry
  • olive oil

 

Pre-heat oven to about 190 degrees Centigrade (non-fan forced/ or 180 for gas).

 

Pat dry spinach leaves with paper towel. Chop up roughly. Mix all ingredients in a glass bowl. Sit aside for about 10 minutes.

 

Lay filo sheets out on a clean surface. Liberally brush with olive oil between each sheet (roughly 10 sheets). Pile spinach mixture onto pastry sheets in a loaf shape about 2cm in from nearest edge. Roll pastry up and pinch each end of pastry case together with fingers. Brush length of spanakopita with more oil. Throw in oven for about 35-40 minutes. Easy.

I had Chicken Majorca de l'orange for dinner with a side dish of steamed red rice, sauteed field mushrooms & leafy green salad. No alcohol was necessary with it as there was brandy and Angostura bitters flavouring the chicken dish.

I love a good Spana. But you have to work for it with all that brushing of the sheets. Then you have to work off all the butter or oil you brushed on your food. Damn health considerations.

 

We have loads of silverbeet in the garden to use up and not as good as spinach it can do the spanakopita well enough.

I just spend the past 3 hours making lasagne. I did a green salad with mushrooms to go with it. It took me about 10 minutes to demolish 3 servings. I was hungry after the hot day today.

 

 

 

I used cream, low fat ricotta, parmesan cheese, margarine and tapioca flour for the white sauce. It was surprisingly light but made the lasagne taste more authentic. I also used Portuguese Port and bush spice for the meat sauce. I omitted tomato paste and just used tomatoes on their own. Now I am stuffed.

Decided to have a traditional Sunday roast with Pork on the Weber.

 

Had an impromptu visit by @@JakeyB with a few bottles of quality plonk so made a day of it !  :hiccup

New recipe and probably timely with the inspiration needed for quality home cooked meals!

Chicken roasted with butter, garlic cloves, lemon, Sage and Milk!

Sounds odd but this really works very well, 9/10 rated by family.

First pic shows browned in butter ready for the oven. 

Served with Potatoes and Onion plus salad.
