Not King George of course as they don't make it up this far north(sadly) but the eating quality of the KG&the Sand Whiting are equal, white moist, delicate,low in oil, and ridiculously healthy for you like most fish. These are some of today's fish or possibly last weeks fish I can't remember. The hard part is catching the beach worms first then the fish kinda follow. You can sea the worms head poking out there in pic one.

@@Luc Hold the serving of dinner. I am just at the bottleo grabbing some French bubbles that we know you are partial to. My choice for accompanying wine would be a recent Clare Valley Riesling but bubbles will be fine. Will be there in 5 minutes.

Lol. Good pick there Mr V.    2014 Pewsey Vale was sipped over dinner and now a Clare Valley dry grape shiraz while typing.

I'm low on work at the moment so I just window shop at DM's in the bubbly section, although Mumm for 40 pesos two weeks ago couldn't be refused  and I drank it watching the cricket instead of beer, as you do.

Actually that's a lie, I never planned to drink beer it was always going to be French bubbles.

 

As @@Luc and a number of others have already said, imported basa is tasteless and completely lacking in texture.  In addition, the manner in which the fish are raised is nothing short of environmental vandalism - seriously.  I urge you to watch What's The Catch with Matthew Evans as well as its UK based older brother, Fish Fight with Hugh Fearnley-Whittingstall.  Eye opening and thought provoking (especially Fish Fight as it's a few seasons old now).  Please think about what you are eating and the impact that food is having on the planet.  If you do, you'll never eat imported basa or vannemai prawns again.  As a direct result of watching these shows, I'm now eating a lot more sardines and a lot less salmon, tuna and no basa or vannemai prawns.

Hugh F.W's series is a beauty and I put up up with the nasally and irritating M.Evans to watch his take on the subject.

The same problem occurs with the huge Tuna fish farms in South Oz.

People think it's wonderful that the fish are farmed there ect ect. Well it is farmed but it's all wild caught tuna that are caught out at sea bought back to pen enclosures and then fattened for slaughter.

The slaughter is fine, we have to eat but the enormous amount of Australian pilchards that are used to feed these voracious fish is a tragedy on a grand scale: Killing a fishery to enhance another fishery.

Until they can breed these in captivity and come up with a sustainable way of feeding the things it remains a blot on the aquaculture business.(Huge money is being thrown at this very problem, I hope they are successful)

After catching 27, I get to keep 10 if I wish and I did this time and the others were released safely back into the water. I normally  adhere to the truism:  "Limit your catch don't catch your limit." but on this occasion I knew the cyclone was coming and I wouldn't be able to fish for a week so I needed enough fish for the week.

what have I started here :D 

We get our fish from Conway in Footscray. Cannot think of a better place to buy fresh fish. 

The best Freshwater fish (IMHO)

Nothing beats fresh a fresh Bass, the best pound for pound fighting fish apart from perhaps a mangrove Jack or Barra, and fantastic scenery whilst throwing out a lure. Trout caught and eaten on the same day also tastes pretty damn good too!!  Did a lot of rock, beach and estuary fishing along with trout in my early years, and gravitated to Bass fishing in my more senior years.

Within 6 "easy lessons with evil" teach you how to catch a wild Brown Trout - maybe not the best but certainly up there fresh and a satisfying experience  when you catch your own!  :D

I can see the makings of a Stereonet Fish-out day with @@Marc in charge of course - - - - - --    can visualize treble hooks embedded in fleshy bits,guys drowning,  nah maybe it's too risky for his liability insurance  :P

I have always been one to dislike fishy smelling or fishy tasting fish.........cuts out a fair few options where fish is concerned, and others don't understand it.

We are extremely lucky in this country to have access to the most delicious, cheap, freshly caught fish (at least in the main metro centres, a  little harder out of town). Whiting, flathead, bream are superb. For something different, try a few leather jackets as well - peel off the skin, lightly toss in flour then a quick shallow fry, yummo and cheap. Or for me, special occasions are John Dory fillets pan fried - to die for!

 

I avoid all the imported farmed products whenever possible - who knows what they have been eating, and the taste is just bland.

 

Sorry, but I just have to tell you my John Dory story.

 

In my first few weeks working for a major food retailer I was put into the deli/seafood section. One day a bloke asks for some John Dory, I looked at him and said, "Sorry we're out of John Dory but I've got his brother Greg here, will that be ok?" He looked a bit confused but said, "Yeah, that's fine".

Luc, I see you are a left handed spinner. Are you a southpaw as well?

I did a lot of kayak fishing about 10 years ago, and getting towed around the lake by one of these was always great fun.

At one stage we would back pack in one man inflatables to some of the bass spots around Sydney - I can relate to getting towed around by a big bass, and it was always fun landing a fish and not puncturing the side.

Never had a fresh bass but had plenty of trout from streams around Tumbarumba in the Snowys.

               Well spotted but I'm right handed and I'm in the minority here in Oz in that I do what (apparently) the majority of fishers do elsewhere around the world and I put the handle on the left side for ease of casting.

 

If you your right handed and have it on the right you have to swap hands when opening the bail arm and casting, it's an arse about process and if lure casting you can miss those strikes you get(rarely I'll admit) when the lure hits the water and gets smashed on the surface because your in the process of changing hands on the rod.

Most people do it and don't even notice it until pointed out.

I cast and my hands don't have to rearrange themselves on the rod which is what you have to do if you have it the other way. Steve Starling and other notables in the piscatorial world used to bang on about it in the 80's and I started doing it back then.

 

If your casting amongst rocks or into trees then you flick your cast and your hand is on the bail arm ready to wind while you watch the progress of your cast, your in control of the situation your not swapping your hands about, it really does make a major difference.

Two whiting so far and two hours till the low and then it's flathead time.

Top-of-the-food-web big fish are generally best avoided - unless you like the spice of mercury and other heavy metals with your food. They are also slow-growing and difficult to replace. Stick with schooling fish, mackerel, pilchards, sardines, whiting, whitebait, etc. and you'll do fine plus find a fair few textures and flavours and health benefits.

 

Do watch the Fearnley-Whittingstall and Matthew Evans programmes as they will open your eyes to fishing methods and fish to buy sustainably. The so-far only certified sustainable fish shop in NSW is "For the love of fish" and are on the web. They do great take-away f&c and sell fresh for your own cooking. Well worth a visit if you can get there. They will also give you clues as to what to buy yourself from your local plaice... Pun very much intended :D

There is a boat yard on Mountain Hwy just near the end of Stud Rd IIRC. They regularly have a sign out for fresh flathead tails on weekend mornings. If I wasn't riding past on my bike I'd stop to get some as flathead tails are my wifes fish of choice, not fishy as you say, no bones and nice firmer texture.

 

Personally I really like Kingfish if fresh, but not that common down here.

 

Interestingly, in January I had to stay overnight in Venice and go to a meeting nearby the next arvo. Went for an 8am walk with colleagues to sight see and came across several fishmongers set up in little squares around town over the course of a couple of hours. Talk about fresh, half of the stuff on the table was still gasping or crawling!
