I managed to get a big lump of suet from a real old-school country butcher.

The king of shortening.I remember reading a Tattlers magazine with the headline 'The glories of suet".

 

Any good recipe suggestions?Things like Golden Syrup dumplings and pineapple upside down cakes are obvious choices but I am sure there are more sophisticated uses.

I think I've only used suet in Christmas pudding and suet crust pastry for steak and kidney pudding. I'd call these hearty classics rather than the last word in sophistication!

Suet, proper north of England food.

 

 I remember beef stew with baked and crispy suet dumplings, my favourite was steamed leek and suet pudding with onion gravy or a steamed steak and kidney pudding with gravy.

 

Not forgetting for pudding spotted dick and custard, if you have to use it for a pudding it has to be this.

I'm sure the two fat ladies would have some recipes. Saturated fat was their main ingredient!

Nothing at all. I love them. It's just the OP was wondering about 'sophisticated uses' and I wasn't sure if sturdy steamed puddings fit that bill.

Yes it is evil but tastes special.It is not all saturated fat.It has a higher percentage of monounsaturated fat than butter.

True, but you don't eat it every day.  It's worth remembering that recipes containing suet usually date from a period when people were a lot more active than they are now and needed energy-rich food in a cold climate.  A nice stew with suet dumplings followed by jam roly-poly with custard would be perfect today in Canberra.  Heavy fog and 4 degrees at 11 am!
