Keith, your Prosciutto pizza looks like you have added the prosciutto after cooking the base. Tell me it isnt so?

My fave pizza is prosciutto and mushrooms. Thats all I need. :confused:

Keith been thinking about some rules of engagment for the SNA Pizza comp.

Here are some ideas for scrutiny

  1. each particpant can make 3 pizza for judging
  2. one basic pizza say hawaiin with secret sauce or herbs the only additional ingrediants - judging focus on basic crust, colour, texture etc
  3. one gourmet main course pizza - rules are basically open to anything you want to make for this one - but we must set a shopping list price cap - not having you import smoked pheasent from Europe the day before at $500 to smash any chance I have - focus on above elements but add in a more expansive flavour element and creativity in the mixture of savoury flavours (must be one style of pizza - no half/half cheats)
  4. open pizza category - do you creative best - have to wow the judges with innovation on this one -let your creative cooking run free and can forget the "basic" requirments of pizza (ie crust could be unusual and you would not get marked down as long as it was still good to eat)
  5. suggest venue is my house - you have choice of using 1930's metters wood oven outside or the "Ilve" oven inside - we can use whichever oven we choose and can vary for each pizza
  6. you may have basic assistant as your offsider - but no chefs or gourmet pizza makers allowed
  7. Judging panel to be appointed - we need a gourmet lover, traditional lover and some nutty guy who will eat anything dished up to him/her (perhaps we need a femal judge included)
  8. Wine can be consumed by judges but wine list must be agreed before hand (im not having you serve them a glass of grange with your pizza against my cleansking $5 bottle to unduly influence their taste buds)

DATE AND TIME IS OF KEITH W CHOOSING - PREFERENCE IS ADELAIDE (I cant travel all that easily with family!)

Happy to have it hear but if you feel that might be an unfair home turf advantage I know of some bloke who has just got a house with a pizza oven and he might allow us to cook off at his place (suspect he will want to be a judge) he does have half decent stereo room and equipment to match.

Suggest if its possible for you Keith we do it in the next few months whilst we have the nice winter hills feel - great for pizza competitions.

Now am I taking this too seriously:eek:

PS I suggest we allow a set number of pizza tests of an "independent" oven if we go down that path to judge the cooking times and unique over characteristics.

Andy I would LOVE to participate in a pizza competition ... i'm in! But i'm not too sure how well I would fare against a guy who calls himself "Italian Spiderman" ... i'm only a tryhard Chinese interloper :) Guess I will have to make my way to Adelaide now.

Hawaiian pizza is an abomination! Where are all the Italians around here ... their nonnas will be turning in their graves!

Jake, you're right - the Prosciutto was uncooked and folded over a cooked pizza base. I've seen it done in Italian restaurants :confused:

I think me challenging Keith to a "cook off" any kind woudl almost be as silly as hoping into the ring with Ali at his prime (ie I dont stand a chance) but the way i see it I get to eat his pizza so who cares! (and I do have a few little tricks I plan to use that might give me an advantage without breaking any rules)

If you are as Italian as JA, you will toss the pizza to get a nice circle. I am no Italian,.......

We need to get this challenge off the ground. However it will have to wait for Andys next shipment of 00 rated super fine dough flour to arrive from Naples.

Groan, he's gotten onto Caputo 00 flour has he :) That stuff is supposed to be the bees knees.

Mate its ok to let on a little about one of your select premium ingredients, after all its the combination of the others that really make the Pizza what it is. Cant have Keith coming over thinking this is going to be a cake walk (or pizza walk)

So which one did you like the best Mondie?

Probably the Fromage mate, White Cheese base, with Gorgonzola, Caramelised Figs stuffed with Mascarpone, garnished with Buffalo Mozzarella & Walnuts. l am not usually a fan of walnuts but they worked well on that pizza. Must have been the flour ;)
