Jack, the rice is simple. Buy a jar of Hainanese chicken rice mix. Then use the broth which you used to poach the chicken and add that to the rice. Cook in a rice cooker and you're done.

I don't think you need a furnace to roast the pork, an oven will do. :)

There isn't much to it but the ingredients are critical to get the taste.

You only need very little of each, if you really want to try I can give you some.

For what I bought, I think it will last a few years...

Tonight I cooked mud crab with ginger and shallot, the claws were gigantic.

Very juicy and tasty.

Yep - I'm a weekend warrior when it comes to cooking. But I love it when i do it.

Actually, when we go camping, that's when I step to the fore as the chef - love cooking over a fire.

That crab dish is maaaaaad!

Dinner was nuffin special.

Pork cutlets on the BBQ,Potato salad with homemade mayo,onion and bacon.Fresh garden salad,lettuce capsicum (3 colours),onion,carrot,tomato and cheese.

Did it actually look like that before you ate it? I'd be spending an hour just checking it out.Must have taken at least as long to cut it up!!!!

Id love to learn Jack. Ive tried but I'm not very good But I love the Japanese knives. Actually have one of these...(the big one :()

I love pork belly too and after many attempts, this is my secret to a really crispy skin:

1. dry the skin in the fridge uncovered overnight.

2. Poke lots of holes in the skin

3. put in oven on high for 30min with skin directly infront of the fan in a fan forced oven.

Seems to work everytime :P
