Dark soy is more for coloring and sweetness and less on salty.. Light soy is more salty, more bean flavour and less sweet. If darker and more potent it sorta means the water has evaporated a bit (high

  • I married a Filipino girl, and she buys a lot of fish and soy sauce from a local Asian grocer. Maybe I can check brands later, at work at the minute.

wow, sounds nice :).

You must visit Haiyin electronic centre then, got plenty of hifi stuff there. another nice place to visit is the garden restaurant at Luhu Lake and tofu at Baiyun mountain's resto.

but since you got family there, they should know where to take you :D  :thumb:

Haiyin electronic centre? I'll have the Audio gd  DI2014 please. With extra spring onion :)

I think I'm the only dude in China, who can't read or talk the lingo, with the only iphone4 that's not hooked up to a network, eat whatever is ordered by the inlaws relatives. I'm really bloated. With food, we had yum cha from 9:00am till 13:00. Had a afternoon meal at 2:00pm, and just been to a resturant that has beetles on the menu, that i will politely passed!

In a typical traditional resturant, there is a garden courtyard in the center with a stream full of fish and beutiful follage and plenty of flowers. Then there's the area where all the live produce that's live and wiggling around, you choose it, they cook it, but I'm not so adventurous on beetles nor the turtles.....

Sliced jalapenos in soy sauce makes a great dipping sauce.

Needs a bit of rice wine as well.

While I'm in China, te better 1/2 wanted to get some more Chinese green tea, well this shop was where we got it from last time and it's the best genuine article for the dosh.....so good that we bought over $200AUD on green tea, saw the tea get weighed and placed into little packets, it then gets placed neatly in a machine by a lovely little girl showing how talented she was, in which all I did was smile and nodded at her because I had no ideas what she was on about. I was in this shop around 3yts ago and she has grown, this little girl can write and draw with both hands, wish I had that talent, and we rudely interrupted her doing her Maths homework at 10:30pm. These kids are pushed to the limit and there parents throw every yuan at there kids future.

The machine then takes the air out and seals the packets with heated bar it then gets placed in boxes for transport and point of sale. Where apart from T2 do you get to try the tea in traditional Chinese style before you buy?.....

Three crabs is my brand of choice for fish sauce. Nice balance.

Actually any noodle soup is good. For Melbournites I recommend the Langzhou beef noodle soup with a bit of their excellent chilli served at Noodle Kingdom in Preston. They make the noodles in the window and I still can't work out how they do that. $9.80 and when finished your stomach will be so tight you could get a job as a tympani drum.

I love this place! Brilliant noodle soups and dumplings. Dirt cheap.  Some other great places around here. I get my frozen dim sum from Phillips Dim Sum on the corner. Good range of dim sum for steaming, deep/pan frying and baking. Always have a few bags handy in the freezer.

Phillips are good. I also like One Noodle Friendship in the arcade a bit further up High St. Good noodles and apparently the dumplings are very good. I've been buying Seng Hok dumplings from the Asian supermarket which are not bad. Handy for a quick noodle dumpling soup. A bit of bok choy some spring onion, coriander and a drizzle of sesame oil. :)

I've not tried this because I was put off by the use of corn syrup but I'll give it a go. I quite liked the Du Son fish sauce I finished recently which is from Vietnam as well. It's sweeter and softer in flavour than the Thai ones I've tried. Still prefer the Tiparos for a daily fish sauce.

I bought some vietnamese soy sauce which the label says has salt, sugar. water and soya bean in it. I had a little taste and seems nice although suspiciously like Maggi seasoning. The label has a white horse and Mr Ma XO on it. Apparently in the past there's been food scares in Vietnam in regards to chemicals etc.

I'm going to have a go at cooking char hor fun (wat dan ho?) tonight. Not sur if they're the same dish but the best one I ever had was from a seafood restaurant in Kuah, Langkawi Island, Malaysia. The egg sauce was so soft and velvety.
