To control the amount caffeine at night, I have switched to Nescafe decaff for night coffee (the one with red cap). It seems to have been obsoleted.

are there any good and healthier substitute for condense and evaporated milk?

 

I have gotten used to no having any sweetness in my kopi or the, but I would like to have that dense milky texture and taste.

 

Tried wiping cream and fresh milk, somewhat good just not good enough but not quite there.

 

I have had coffee and chai tea at some Indian restraints, and they got it just right with fresh milk but I have not idea how they do it.

Which fresh milk have you tried? Most cafes use Meiji for that ease of foam. Can try but a ittle high on sugar if that is okay with you. I am using cowhead from Ben food warehouse. https://www.benfoods.com/Brands/UHT-Milk

I've tried a few organic full cream milk and low fat. Sometimes I get it good, sometimes not. Full cream gives that full creamy flavour and texture, which low fat cannot.

 

So I have heard from someone from India, their method is 50% milk and 50% water, turn off fire once boiled and bubble. That seem to be the way to get it just right.

Just that full cream milk may be too fattening for daily consumption so am looking for healthier but equal substitute.

 

Good point about the ease to foam, it does add to that creamy and foamy texture.

I’m a big fan of greenfield full cream. Good micro foam and not to much yellowing of fats when heated. Meiji is ok as a second option and can be handy as most 7/11 shops carry it.

Greenfield is available quite easily at where I frequent. Will give it a go.

 

Do you find it too fattening ? Or do you restrict yourself to a certain no of cup?

 

And yes, Meiji is available at 7-11. Their chocolate flavour milk is one of my favourite. Always tempted to get it when I come across one.

I typically use a 9oz bodum pavina cup and split a 21gram shot to 2 cops for latte. Normally just one a day but sometimes 2. Can’t stand lowfat, if you are going to use milk make it worth it.

 

 

Decaf is basically being without coffee. I can’t drink decaf...what’s the point.

tried coffee and tea with whipping cream instead of milk, got to say, I like the taste. Pretty milk, creamy and robust.

I use to buy Sumatra Mandheling coffee beans in 1 kg by 5 pkts from Sarika Food & Beverage Pte Ltd in Ching Bee Ave.

I find Smadheling is suitable for my palate.

 

Recently tried Kenya, Guatemala and Ethiopa. Particularly good is the Yirgacheffe brew from Starbucks.

Had it several times and bought a pkt of 200gram of beans for home brew.

 

Just wonder ir any connoisseur knows any other source for this bean in Sg at a cheaper cost though I wou;dnt say $28/ a pkt is costly as it can make 8 brews of about 500ml each brew which is equivalent to a Venti size serving.

I go through like 5-6 160ml cups a day in the office. Now WFH, gonna grind through my stash quicker.

 

Local I just order RedMart 1KG for about $15.

I buy 10KG of whatever dark roast I can find in supermarkets when travel to EU.

Last trip to HCMC for work, I bought some lose packs of 1KG to try.

 

I just need the kick and cheaper better since I go through so many cups a day.

Very reasonable price for 1kg of Ethiopia Kochere for US$54/ and Guatemala for US$42 for 1kg.

 

But the Sumatra Mandheling is costly at US$42/ per kg when I can get it from Suzuki Coffee SGD$35.85 for 1kg whole beans ( self collect) .

 

The shipment is not indicated.

 

If shipment reasonable will certainly try their Ethiopia and Guatemala.
