Bread flour needs to be high protein (12% plus)and fresh (distant used by?).

Defiance and Wallaby brands are widely available in 5kg bags at the big super markets; $9-10, so works out about a dollar per batch.

I also get Weston Milling bakers extra strong flour from the health food store at the markets. It comes in 25kg bags, but they also sell smaller quantities.

Love my Panasonic breadmaker. 

Tasted some loveley bread at a BBQ about 15 years a go which was made in a Panasonic breadmaker and i had to get one.

Got one and have been using it for about 15 years making bread for friends, Rellies, ,neighbours and for a couple of GTG's.

Tried other brands but Panasonic is the best.

 

btw. Looking for the bread pan for my Panasonic SD-251 or the full machine - 15 years of non stop use has taken it's toll on the poor over worked thing. (lost it's non-stick)

I found that a bread maker makes one loaf in whatever time it takes to make it. 

 

In that same time (or less) I can do three loaves by hand, and bake them up beautifully in the oven. Plus, I love the rhythm of the making it by hand method. My wrists aren't liking it as much, so I'm considering a dough mixing machine. 

 

I love home made bread, much more so than bakery bread.
