Don't some TV's have 'game mode's which bypass alot of image processing trickery etc?

Yes, but you are still at the mercy of absolute panel or display limitations.

 

For gamers absolute measures, response times and absolute freq available.

The PC monitor designed as a monitor usually has terrible colour reproduction because the focus is on absolute speed.

 

The video card is left to do all processing.
