I thought I read that the iQ2 has three tuners, According to the latest FOX magazine, you can record two programs at once, what happened to the third tuner?

Only two will be used when the service starts according to the fine print on the web site.

The iQ2 actually has 4 tuners. 1 is only used for recording on demand programs onto the hard drive. Another has been disabled at launch. Apparently they didn't have time to rewrite the code to get it working, the code for that section is borrowed straight from the iQ1 at the moment.

Only two channels are for recording. The 3rd tuner ensures that you can always be flipping between channels etc, while the fourth is for on demmand content.

I think it's a decent idea, I would never record more than two things at once anyway (especially when you consider that a lot of stuff gets repeated the next day)

I was hoping that I would be able to use my Toppy 7000 for the Olympics and pick up the slack on the iQ2 (Satellite, so no 7 or 70) with the other FTA channels.

Yes. In future, you'll be able to record two programmes while watching a third programme live.

I'm pretty sure it was in the blog about what the four tuners would be used for - I'm sure I heard it somewhere.

Watch live and have to suffer through the ads? No way Jose! I don't watch anything live at all, except on the ABC and even then, rarely.
