Ps3 Audio Options

While I bide my time before getting an HDMI enabled receiver, I am interested to hear peoples thoughts on the alternative best choices for audio.

I was watching BHD earlier and was switching between 5.1 DD and 2 channel PCM. What do you think is best to watch BR in and why?

I seemed to think 2 channel PCM was best,even though you do sacrifice the rears to an extent.

Can you have the picture and sound going to a LCD or plasma via HDMI, and a stereo analog signal (from the AV multi out) going to a avr/amplifier simultaneously,,?
